The sear marks have flavour. I think the fear over cast iron is overblown. I wipe mine down with canola oil every few grills. Any debris comes off really easy as long as it’s seasoned. Not too much work. Meat sticks less easily to properly seasoned cast iron too. Both cast or stainless are respectable choices though.

ive heard of the big steel keg. I don’t know much about it.

I figure that these Kamado-style cookers are generally all the same, kinda like full size trucks. You can argue and fight over whether the F-150 is better than the Tundra, Titan, Ram, or Silverado. But there’s probably not more than a nickels difference between them. Same way with the egg, Primo, and Big Steel Keg.

May as well keep the ‘B’ theme going… Bourbon…
