So my work experience has been approved and my application now says “Under Review - Society” (from CFAI). How long before they typically approve everything? It’s only been 10 days, but have heard they can be quicker than that.

Sorry man, after 10 days, it means you are under PCP investigation.
Just depends how busy your society is and if they know you. I speculate that it helps to have a good reference from that society and be known to the staff. I’ve had both in the course of my time working toward this. When I submitted my application my local society called because I had done something wrong, they fixed for me, called the CFA Institute to clear it up, and got everything approved in a day. I have a great society with really good staff.
