The book end sizes (jumbo and popcorn) generally have the least shrimp taste IMO. If you want to taste them and aren’t just after the texture, the middle sizes are preferable.
Have you ever had shrimp cooked in Cajun spices? If not buy some zatarans shrimp boil and it’ll be an easy recipe
