I dont know about exotic meat, but *exotic* animal parts are delicious and so rarely appreciated in the USA. Liver, kidneys, blood sausage, gizzards, sweetbreads, chicken hearts - that is some tasty stuff. Just stay away from brains to avoid mad cow.
