I never paid much attention to this, until I had a 28 day dry aged sirloin that was super tender + that I preferred over the filet mignon (yes I know not an apples/apples comparison since filets have little fat).
Now I’m debating about buying a dedicated mini fridge primarily to dry age those big costco rib roast cuts. install a fan in the fridge, and just let it sit there for 28 or 45 days before cooking it off. Costco price is below half of Whole foods dry aged rib which sells at ~$28 a pound, and online which can shoot to $60+.
did the experiment once, results were good but not restaurant grade (obviously). you’ll have to fiddle around with the settings and technique to get good results, which I believe are achievable. If you’re able to keep a dedicated fridge I think it’s worthwhile if you’re a frequent consumer. Its a rabbithole as well, you’ll end up searching for hours online for the best way to prepare the meat - if you’re into that kind of thing I say do it.
Sees like there’s a lot of debate on it. I saw a bunch of articles about humidity, vs using salt or not, wrapping it up, etc. and then there’s people who do nothing beyond just throwing it in.
I don’t have a spare fridge for this so I only had one run at it. The recipe I tried was marinating it in a sealed plastic bag with viet fish sauce for a few days then wrapping it in cheese cloth for drying. It tasted pretty good with good meat texture but I think I overdid the marinade a bit. Would definitely prep steaks in batches if I had the refrigerator capacity. start pricing that nice lil steak yield curve.

Anyway, regarding the dry aged steaks… While I was in college, some guys aged a steak in the normal refrigerator. The results were superb, but I don’t know if they could have been even better with dedicated machinery. Maybe this would be a good way to “dry run” (pun) the process to see if you are really into this. Unless you have a lot of parties, your intake of red meat might have to increase to justify the special fridge, and this might not be so healthy.
