I hit up Santarpio’s a few weeks ago. Def do not get to East Boston enough.

I make a chicken vinaigrette:
I make a chicken vinaigrette:
- Sauté chicken breasts in butter
- Bake the chicken until it’s done
- Sauté chopped shallots in the remaining butter
- Deglaze the dish with red wine vinegar
- Boil the vinegar down to about ½ to ⅓ its original volume, or until the whole house is filled with the aroma of red wine vinegar; open the windows only if your spouse isn’t off visiting her sister for the week
- Thicken the vinegar sauce with . . . you guessed it! . . . butter
- Serve over rice
