But I think using alcohol to climb up one rung is low and not fair
This may spark up a thread from the past debating whether platonic relationships can exist between the opposite sexes. If you think no, then the rational move to make when in the friend zone would be to state one’s intentions. Outcome A, you get the girl. Outcome B, you escalate the process of not being friends. If you believe opposite sexes can be friends, well thats another story beyond my rational.

I think the argument is more that men have great difficulty staying friends with women they want to sleep with. Women can very easily be friends with men they don’t want to sleep with.
The key point you’re missing is that it depends as much on what she wants as what you want. Acquaintances can be upgraded, but friends generally cannot, unless a lot of time has passed since you last saw each other.
There’s also the scenario where she’s interested but holds back because she thinks you aren’t or you are with someone else, and then something happens to change that situation, but thats where the woman is in the friend zone, and that’s a different dynamic.
Could be many reasons besides horny:

emotionally volatile,

feeling angry/insecure for whatever reason and using it to make herself feel better,

doing smth stupid just for the sake of doing smth stupid
all this might not even be related to the guy himself.
Remember that when men cheat, it’s generally about who he cheated with.
When women cheat, it’s often about who she’s cheating on.
She may well do you just to make the guy she was with earlier feel unspecial.
